Fast and Cheap Parmesan Truffle Fries

When I first tried truffle fries almost 8 years ago I was in love! They had such a rich flavor and aroma that I would order them everywhere. Like most fads though I grew tired of them and their hefty price tag. Recently though I tasted a white truffle oil at the farmer’s market and felt inspired so I purchased the bottle and got to cooking (no really, I made these that same day). These came out great and affordable! A bottle of truffle oil will set you back $15-20, I know what you’re thinking “Jackie, that’s a lot of money for a specialty oil” but hear me out, this stuff is strong, it only takes a teaspoon to add truffle flavor to your dish. That teaspoon only costs about $0.36, I think you can indulge in that. Not to mention that’s much better than the $4-8 it would cost at a restaurant. So go out there and treat yourself to a bottle of truffle oil and make these fries. I promise you won’t regret it!
