Kitchen Sink Breakfast Pizza

I remember the first time I tried breakfast pizza, I was a teenager at my aunt’s house on Christmas morning and it was a tradition to make breakfast pizza for a quick casual meal while opening presents. Her version had sausage gravy and bacon, this version is lightened up for an everyday meal that won’t use up all your recommended daily allowance of calories. The best part about this pizza is you probably already have all the toppings in your fridge! I make this for Dan and I on the weekends so I can use up leftovers from the weeks meal plan and make space for the next weeks groceries. I’ve adapted this recipe from Skinny Taste’s Breakfast Pizza Recipe.

Kitchen Sink Breakfast Pizza

A quick pizza recipe that allows you to clean out the fridge of left overs and uses a greek yogurt crust for less guilt.

Ingredients

  • 1 cup Non-Fat Greek Yogurt [1]
  • 1 cup All-Purpose Flour [2]
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • Everything Bagel Seasoning
  • 5 Large Eggs [3]
  • 1 cup Shredded Cheese [4]
  • 1/4 cup Turkey Sausage chopped
  • 1/4 cup Sliced Turkey chopped
  • 1/4 cup Caramelized Onions
  • 1/4 cup Sauteed Bell Peppers
  • 1/4 cup Cherry Tomatoes thinly sliced
  • 3 Scallions chopped
  • Cooking Spray

Instructions

  1. Preheat oven to 450 degrees. Line a baking sheet with parchment paper and spray with cooking spray.

  2. In a large bowl whisk together flour, baking powder, and salt. When it's well incorporated make a well in the center of the dry ingredients and add the Greek yogurt. Mix together with a fork until well incorporated. Dough should be a little crumbly but not too tacky that it sticks to you. Adjust flour and yogurt as needed.

  3. Flour a work surface and knead dough about 20 times. If it is too sticky add more flour one teaspoon at a time. Form into a ball.

  4. Cut the dough into 4 equal pieces (I use a bench scraper) and then roll those pieces into 8 inch crusts. Place crusts on lined sheet and poke all over with a fork to prevent bubbles. 

  5. In a small bowl whisk one egg for the egg wash. Brush each crust with egg wash and sprinkle Everything Bagel Seasoning over the edges.

  6. Place crusts in the oven for 8-10 minutes or until the edges start turning golden brown.

  7. While the crusts are baking whisk the remaining 4 eggs in a bowl. Cook the eggs over medium low heat in a nonstick pan continuously stirring so you don't get large clumps as it cooks. If clumps begin to occur take the pan off heat for a minute and continue to stir. When eggs are the consistency of a thick sauce take off heat.

  8. When crusts are golden brown carefully take them out of the oven and begin topping them with scrambled eggs. Then add cheese, sausage, sliced turkey, onions, peppers, tomatoes and scallions. 

  9. Put back in the oven for 5-8 minutes or until cheese is melted. Sprinkle with salt and freshly cracked pepper before serving.

Recipe Notes

  • I used sausage, sliced turkey, caramelized onions, and sauteed peppers because that's what I had in the fridge this week. You can use whatever you have on hand as toppings.
