Nashville Hot Chicken Sandwich
Chicken sandwiches are popping up on menus everywhere recently and in my opinion the ultimate chicken sandwich is the Nashville Hot chicken sandwich! This sandwich packs the heat but is mellowed out by a little sweetness from the brown sugar. It’s crispy saucy exterior is surprisingly easy to achieve at home. Perfect for satisfying that craving without leaving home. Where did Nashville Hot Chicken Originate? Nashville Hot Chicken was invented by the Prince family, owners of Prince’s Hot Chicken Shack. The recipe is believed to be created by accident when Thornton Prince III’s girlfriend fried him up some chicken with extra peppers after he came home late one night. He liked it so…

Italian Stuffed Pork Loin Made Easy
This stuffed pork loin is a foodie’s simple take of a Porchetta. A Porchetta is a traditional Italian dish that consists of a boneless pork roast that is stuffed with liver and fennel and roasted for many hours over a fire. I’m sure the original is delicious but liver and fennel are not staples in my refrigerator. My version skips the old world ingredients and uses delicious Italian meats and cheeses instead. I created this recipe when I had a bunch of leftover cheeses and deli meats from a charcuterie board in the fridge that I needed to use up before they went bad. I trimmed the pork loin of all fat so…

What I’m Bringing to Thanksgiving Dinner
Thanksgiving is definitely my favorite holiday! I love spending time in the kitchen with my family because I got pretty lucky with a family of stellar homecooks. Although hectic, being in the kitchen with them has inspired me and allowed me to learn so much over the years. My family likes to stray from traditional when it comes to our Thanksgiving dinner. We always search for new takes on the classics that we know and love to keep dinner exciting. My family started to use Google Documents last year to organize our menu & recipes and it’s made everything so much easier. You can find my FREE Google Docs template here. We just…

The Best Steak You’ll Ever Make!
Are you afraid of buying an expensive steak and ruining it? Do you shy away from cooking steak because you don’t have a grill? Don’t worry, I was in those shoes once too until I learned this method. It results in the juiciest steak and it is so quick and simple! I learned this method on Food Network’s The Kitchen and apparently it’s Bobby Flay’s preferred method. They use a porterhouse but my budget doesn’t allow for that so I use whatever cut is on sale at Aldi that week. I’ve tried this method with T-bones and NY Strip and both work well, just adjust the cooking time accordingly. Still scared? Invest…

How to Create a Meal Plan You’ll Actually Want to Follow
Over the past few years I’ve dabbled a lot in cooking and preparing meals for the week. Dan and I spent a few months meal prepping on the weekend and found that by Thursday I was sick of the meals and just wanted to order Uber Eats. For about a year I owned a healthy catering service where I cooked fresh meals everyday for my students but that was exhausting and didn’t allow me time to relax after my day job. When Dan and I moved in together I had to find a solution to making dinner every night and lunch for the next day without getting tired of cooking halfway through the…

Fast and Cheap Parmesan Truffle Fries
When I first tried truffle fries almost 8 years ago I was in love! They had such a rich flavor and aroma that I would order them everywhere. Like most fads though I grew tired of them and their hefty price tag. Recently though I tasted a white truffle oil at the farmer’s market and felt inspired so I purchased the bottle and got to cooking (no really, I made these that same day). These came out great and affordable! A bottle of truffle oil will set you back $15-20, I know what you’re thinking “Jackie, that’s a lot of money for a specialty oil” but hear me out, this stuff is strong,…

Kitchen Sink Breakfast Pizza
I remember the first time I tried breakfast pizza, I was a teenager at my aunt’s house on Christmas morning and it was a tradition to make breakfast pizza for a quick casual meal while opening presents. Her version had sausage gravy and bacon, this version is lightened up for an everyday meal that won’t use up all your recommended daily allowance of calories. The best part about this pizza is you probably already have all the toppings in your fridge! I make this for Dan and I on the weekends so I can use up leftovers from the weeks meal plan and make space for the next weeks groceries. I’ve adapted this…

5 Kitchen Tools For Guaranteed Easy And Delicious Meals
In the past I’ve been guilty of purchasing every neat kitchen gadget I come across at TJ Maxx but a lot of these gadgets are one trick ponies and take up way too much real estate in your kitchen. When I moved in with Dan I was faced with downsizing my collection of tools and found myself going back to these basics over and over again. If you are just beginning to cook or if you’re a well seasoned chef these are the items you need in your wheelhouse to make cooking as simple and delicious as possible. Good Sharp Chef’s Knife If your knife can’t cut cleanly through a tomato…
